When I'm done making my water kefir drink (I use Dom's basic recipe) it's all bubble. Then when I strain out the grains and the other stuff and stick it in the fridge, it loses all bubbles. Any recommendations?

But, I have an idea:
After you strain/filter your brew try this:
1. Add a small spoon of sugar to the brew
2. Re-cap it.
3. Let it sit on the countertop overnight.
If you cap it tightly after adding sugar then the yeasties in the brew will ferment more and make more CO2. That might solve the problem.
Let us know what happens.

i find i keep the fizz when i have it in a sealed container. but check it every once in a while (i drink mine every day) and make sure it doesn't break anything.
if you are still having problems in a sealed container- add a little sweetner- stir it up/ shake it up, and put the cap back on? - i've done this to get fizz too. and if i pour a glass with no fizz- then i just add a little honey or raw sugar- and stir it- that seems to help.

Mon, November 9, 2009 - 1:36 PMCareful with the sugar. Fermentation can produce enormous pressures in a closed vessel.
Normally when I bottle a five or six gallon batch of beer I only add about 3.5 - 4 ounces of sugar to the whole thing.
Too much and I'll be greeted some morning with a mess of burst bottles.
